Ahhh…Summer! The days are long, and hopefully spent soaking up the sun. The nights are filled with lounging outdoors, barbecues, preparing for that long awaited summer vacation, and enjoying as much of the warm weather as we possibly can before we have to layer up our wardrobes and break out the bulky winter coats again. In some places, temperatures can rise anywhere from 90 degrees to 115 degrees but there are a couple of things other than diving into the neighborhood pool you can do to keep cool and refreshed. What better way to get into the summer spirit and stay cool than with a delicious, light, and nutritious smoothie that can also function as a full meal?
The Blueberry Mint Smoothie is refreshing, detoxifying, quick to make, and enjoyable for any level of summer heat. Since mint is a staple ingredient used in Middle Eastern cuisine, I couldn’t let my roots down and had to incorporate the herb into this recipe. Not only do these ingredients taste amazing and complement each other when combined, they also have plenty of health benefits.
Blueberries are high in fiber, potassium, folate, vitamin C, and vitamin B6, which are all key in supporting cardiovascular health, immune health, and cholesterol management. Mint contains trace amounts of iron, a mineral you need to make red blood cells. It also has small amounts of fiber, vitamin A, and potassium which are shown to be supportive of digestive health, weight management, memory, cognition, oral care, and respiratory health.
Consider this recipe a guilt-free, healthy summer treat!
2 cups spinach (can be fresh or frozen, but will blend better if you freeze the night before)
2 cups blueberry (I used 1 cup fresh and 1 cup frozen to give it a different texture)
1 kiwi (cut in half)
3-4 large mint leaves
1 cup coconut water
1 cup ice
1. Add the spinach, blueberries, kiwi, and mint leaves and blend for about 30 seconds.
2. Add the water and ice. Blend for an additional 45-60 seconds. If the mint leaves and spinach still seem chunky and not completely broken down, blend for another 30 seconds.
3. Pour in your glasses and serve.
