Beets are a type of root vegetable that are rising in popularity as a result of the many health benefits people are seeing by finding ways to add them to the meals they enjoy throughout the day. Red beets are one of many beet varieties. Rich in vitamins C, A and folate, they are a very nutritious vegetable. I’ll admit, when I first tried beets, I was not a fan due to their rich “earthy” taste. My mind changed when my husband made a fresh beet juice mixed with sweet and sour vegetables and fruits that turned the earthy tasting flavor into something pretty magical. A mix of tart from the apples and lemon with the mild sweetness of the carrots and a kick of spice from the ginger was the perfect blend to tone down the strong taste of beets. Red Beet Juice Ingredients:
- 1 large red beet, washed & peeled
- 3-4 carrots, washed & peeled
- 1-2 green apples, cut it half
- 1 lemon, peeled
- 1/2 inch fresh ginger, peeled
There’s just one: feed all ingredients through a juicer.
